Ingredients

  • 2 tbsp olive oil

  • 1 onion, diced

  • 1 red bell pepper, diced

  • 2-3 garlic cloves, minced

  • 1 tsp cumin

  • 1 tsp paprika (smoked or sweet)

  • ½ tsp chili flakes (optional, for heat)

  • 1 can (14 oz / 400g) crushed tomatoes

  • Salt & pepper to taste

  • 4-6 eggs

  • Fresh parsley or cilantro, chopped (for garnish)

  • Feta cheese (optional, for topping)

Directions

  • Sauté veggies: 
    Heat olive oil in a skillet over medium heat. Add onion and bell pepper, cooking until soft (5-7 mins).
  • Add spices & tomatoes:
     Stir in garlic, cumin, paprika, and chili flakes. Cook for 1 minute until fragrant. Pour in crushed tomatoes, season with salt and pepper, and simmer for 10-15 mins until thickened.
  • Add eggs:
     Make small wells in the sauce and crack eggs into them. Cover the pan and cook for 5-8 mins (until eggs are set to your liking).
  • Garnish & serve: 
    Sprinkle with fresh herbs and feta (if using). Serve hot with crusty bread or pita.

Notes

  • Add spinach, kale, or zucchini for extra veggies.
  • Top with merguez sausage or chorizo for a meaty version.
  • For a green shakshuka, replace tomatoes with leafy greens and herbs.
