1 red bell pepper, diced
2-3 garlic cloves, minced
1 tsp cumin
1 tsp paprika (smoked or sweet)

Salt & pepper to taste
4-6 eggs
Fresh parsley or cilantro, chopped (for garnish)

Directions
- Sauté veggies:
Heat olive oil in a skillet over medium heat. Add onion and bell pepper, cooking until soft (5-7 mins). - Add spices & tomatoes:
Stir in garlic, cumin, paprika, and chili flakes. Cook for 1 minute until fragrant. Pour in crushed tomatoes, season with salt and pepper, and simmer for 10-15 mins until thickened. - Add eggs:
Make small wells in the sauce and crack eggs into them. Cover the pan and cook for 5-8 mins (until eggs are set to your liking). - Garnish & serve:
Sprinkle with fresh herbs and feta (if using). Serve hot with crusty bread or pita.
